Boragó, Santiago’s answer to the latest trend in foraging, hyper-localism and avant-garde gastronomy, will be represented in the Gelinaz! summit in Belgium this June. The event will bring together the hottest chefs in modern gastronomy, including chefs such as David Chang, Rene Redzepi, Luis Andoni Aduriz, and Santiago’s own Rodolfo Guzman of Boragó. The event’s website can be found here, and offers an insight into how things will play out. While the event is being held to honor Belgian culinary pioneer Philippe Edouard Cauderlier, it promises to be anything but a 19-th century celebration of food. More information to come.
